Hand-harvested and 95% destemmed on top of a whole-bunch component, this wine was fermented wild on skins for 12 days. It was then left to age for five months in French oak before being assembled and left to settle in stainless steel for a month.
The resulting wine is elegant and serious, with plenty of lively freshness to brighten things up.
