Six years aged before release. Moderate dosage. Aromas of wet stone, red apple skin, spice, and apple blossom. The rich palate is broad and supple, with a bright minerality. Long, detailed, rising, finish. Ripe red fruit flavours and a firm core of savoury minerality.
For Godmé, top-quality vineyard work is of utmost importance for later quality in the glass. "When I see the grapes hanging on the vine, I already know how the champagne will taste later." This philosophy allows Godmé to produce Champagnes expressing the subtlety and strength of the terroirs of which they are from. Hugues is deeply committed to organic farming. The vines are farmed biodynamically. This approach, ploughing, cover cropping and homeopathic treatments, results in the grapes developing better than neighbouring vineyards. The roots are deeper, in a more mineral-rich environment, thereby generating soil-driven grapes that are at once riper with higher concentrations of sugar and acidity.
