Julien Mareschal is one of the only people to make wine in the Côte de Caillot, right outside of Pupillin, Jura. He works organically and has been in conversion to biodynamics since 2012. Each of his wines has a vineyard name. Proportionately, he has a lot of Savagnin, almost 50% of his vineyard holdings, grown on grey marle soils.
As with all Vin Jaune, it is made from 100% Savagnin and are fermented and matured in foudre for the requisite 65 months. This is a serious Vin Jaune with notes of mustard leaf, coriander seed and that typical aged Comté salinity.
Bottled in the traditional 620 mL Clavelin as a nod to the amount lost as angel's share during extended maturation.
