This cuvée of Poulsard / Ploussard is from fifty-year-old vines in a terroir of gray and white marl. The berries are harvested manually, the vinification is done naturally using native yeasts and the aging lasts one year in truncated conical vats.

Jean-François Ganevat chooses not to practice any punching down or pumping over and bans the addition of sulfur.

Sublime and ethereal, notes of ripe red fruits with spicy, earth and floral nuances. The attack on the palate is fresh and light evolving into a supple and sapid body. A delight.
