Crisp, bright and fresh - this is 100% Palomino, the grape most commonly found in Sherry - but made as a dry, fresh, non-oxidative white wine.
Through producers like Muchada-Léclapart (who we also represent), we're beginning to learn this white grape variety's ability to translate the mineral chalky soils of Jerez into fresh, linear white wines that drink with the same purity and refreshment as good Chablis.
Green apple, citrus, white floral notes. The wine is light, fresh and vibrant. Slightly salty too. Organically grown, hand harvested, wild fermented in stainless steel tank, aged on lees for 9 months before being bottled unfiltered and unfined.
Hacienda La Parrilla is run by the Rebuelta González brothers, who farm 17 hectares of grapes on their organic estate of 500 hectares. They are based in the San Jose del Valle, about 35km SE of Jerez near Sierra de Cadiz, where they farm olives, crops and free-ranging Black Iberian pigs. Their family estate dates back to 1881.
