Vinification
This wine was inoculated with an organic cultured yeast and fermented at cool temperatures in stainless steel tank to retain its freshness, aroma and purity of fruit. No malolactic fermentation, the wine was aged on lees for 12 months prior to being racked and then filtered before bottling.

"Bright, even, very pale yellow. The nose is distinctive and fresh, with aromas of gooseberry, kaffir lime, grapefruit, elderflower and nettle. Medium-light bodied, aromas of gooseberry entwined with grapefruit, zest, kaffir lime, elderflower and a touch of nettle. Delicately smooth mouthfeel carried by zingy acidity, with good energy, landing a juicy, refreshing closing. Match with fresh-shucked clams and whitefish over the next 3 years. Fermented cool in stainless steel to 13% alc, no MLF, aged on lees for 12 months. Organic certified. 18.5+/20 pts (94 pts) May 2024 RRP $20"
