Sato's first Gamay Noir grown on their own vineyard (La Ferme de Sato).
An ethereal, delicate rendition - both complex and subtle. Red berries - raspberry and ripe strawberry, with underlying notes of white pepper and violet.
Delicious now with a light chill, would also cellar well to reveal more complexity.

Natural yeast fermentation. 40% whole bunch. 30 days on skins. No additives except for 15 mg/L sulphites before bottling.
Maturation
13 months in old French oak barrels
Bottling
26 July 2022 without fining or filtration.
