After harvest, the grapes are cooled and undergo maceration of skins for 10-15 hours before being whole bunch pressed and cool-fermented in stainless steel tank to preserve freshness and aroma. The wine is kept on fine yeast lees until bottling to maintain freshness and help build texture and mouthfeel.
