Coll dell Sabater is 100% Cabernet Franc and always a favourite from Escoda. Cabernet Franc, grown at altitude and on limestone soils, seems to produce an amazing depth of flavour, without losing anything to freshness and drinkability. Just 15 days maceration in amphora, 6 months of further maturation in stainless steel tank, the wine was bottled and then rested for a year before release. As with Cabernet Franc expect medium body and tannins, nice blue-black berry fruits and a revitalising freshness and energy. Can be served chilled (say 14 degrees, not too cold) but equally delightful at room temp too.
Escoda - Sanahuja wines are from dry-grown, ancient bush vines on limestone soils, in the foothills of the Tossal Gros national park (Conca de Barbera, 1 1/2 hours Southwest of Barcelona, Spain). Joan Ramon Escoda, founder of the famous Bar Brutal in Barcelona, and his wife Mari Carme Sanahuja, make all their wines in tinajas (Spanish clay amphora), which are then fed down into their undergound cellar, all by gravity. Never rushed to bottle and all made without any added sulphites, fining or filtration, these wines are pure, fruitful and energetic, and amazing examples of what natural wine is all about.
