Allevare is the latest addition to our Australian portfolio and is run by partners Lucy and Alysha, who are based in Gippsland, Victoria. Lucy has a Masters of Oenology and Viticulture, and has done vintages across France, Chile and Australia, and Alysha, with a background in floristry, has joined her in business and also works for William Downie Wines. Together, they run Allevare wines, meaning 'to raise or nurture', where they are making wines with organic fruit sourced from vineyards across Victoria.
This Shiraz is grown by Tim Sproal from Minim Wines in Metcalfe, Central Victoria. It was split into three portions, each giving complexity, detail and layers of flavour; 50% was destemmed and macerated, 30% was fermented as whole bunches, and 20% was carbonic macerated for three weeks. Once pressed it was matured in large format French oak for 12 months. A cool-climate Shiraz (or should we say Syrah) with finesse, great texture and a pleasantly herbal touch reminiscent of Southern Rhône Grenache.
Organically grown, hand harvested, wild fermented, unadjusted, unfiltered, unfined. Minimal sulphites added at bottling.
