Pinot Noir from the 'La Plante Chassey' plot at Domaine Derain's vineyards in Mercurey, Burgundy, just south of where the domaine is located in Saint-Aubin.

Organically farmed, hand harvested, fermented as approximately 50% whole bunches for 12 days before being pressed and matured in aged French oak barriques for 12 months before being bottled unfiltered and unfined.
