The wine is made from Savagnin grapes that survived the early, severe frosts of 2017. Marl-limestone terroir. The wine was aged Sous Voile, or under flor (a protective veil of yeast) for 4 years.
Deserving of its cult status, this is a masterful wine that does not disappoint. Enormous complexity in an oxidative style that is both fine and powerful, very scalable in glass. On the palate, the creamy attack develops great flavor or nuttiness, citrus, and spice. The wine is endlessly persistent.
As with all Ganevat wines, this is made with natural vinification without intervention, native yeasts, the wine is unfined, unfiltered with no added SO2.
